Lentil & Beef Rissoles
These little rissoles are a real hit with my kids. You can add in little extras of goodness for grating in zucchini or carrot if you wish as well. And so yum!
Serves: 24 Prep: 20 min Cook: 3-5 min
I’m not strict with the quantities – balance it as per your taste preference.
- 500g lean mince meat
- 400g cooked lentils
- ½-1 small onion, diced
- ¼ cup of basil or parsley
- ¼-1/2 cup of Parmesan
- ¼ cup breadcrumbs
- 2 eggs
- Salt and pepper to taste
- 2 tablespoons olive oil
- Olive oil for frying (or your oil of preference)
Makes about makes about 24 rissoles
Mix all ingredients really well in a bowl. Roll into small round balls. Fry for a few minutes on each side until completely cooked through.
